Peruvian Chicken Stew

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 cup chopped onion
  • 2 pounds boneless skinless chicken breasts, cut into ¾-inch cubes
  • 2 tablespoons aji Amarillo paste
  • 1 ¼ teaspoon garlic salt
  • ¾ teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • 4 cups cubed, peeled potatoes
  • 3 cups chicken stock
  • 1 ½ cups frozen peas and carrots
  • 2 tablespoons chopped fresh mint

Direction 

1. Heat oil in a 5-quart Dutch oven on medium heat.
2. Add in the onion. Cook and stir for five minutes until the onions are softened.
3. Add the chicken. Cook and stir for five to seven minutes or until they’re no longer pink.
4. Add aji Amarillo paste, garlic salt, cumin, and turmeric. Cook and stir for one minute.
5. Stir in the potatoes and chicken stock. Bring to a boil.
6. Reduce the heat to medium and simmer, uncovered, for 15 minutes.
7. Add in the peas and carrots. Simmer for 10 minutes longer or until vegetables are tender.
8. Stir in the mint. Serve with cooked white rice.

Smokehouse Burgers

Ingredients:

  • 1 pound ground beef
  • 1 tablespoon onions, minced
  • ½ to 1 teaspoon black pepper
  • ½ teaspoon garlic salt
  • 4 hamburger rolls

1. Mix the ground beef with the seasonings in a medium bowl until they’re well blended. Shape the ground beef into four evenly sized patties.
2. Grill, pan-fry or broil the burgers on each side for four to six minutes, or until the burger is cooked all the way through. The internal temperature should be 160 degrees Fahrenheit.
3. Serve the burgers on toasted rolls.
4. Garnish with desired condiments and toppings.

Korean Fried Chicken

Ingredients:

  • Chicken and Marinade
    4 chicken breasts
    1 cup buttermilk
    ½ teaspoon salt
    ¼ teaspoon white pepper
    ¼ teaspoon garlic salt

Crispy Coating

  • 1 ½ cups flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon baking powder
  • 1 teaspoon chili flakes
  • Vegetable oil for frying

Sauce:

  • 2 tablespoons gochujang
  • 2 tablespoons honey
  • 4 tablespoons brown sugar
  • 4 tablespoons soy sauce
  • 2 cloves garlic
  • 2 teaspoons minced ginger
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seed oil
  • 3 spring onion
  • 1 teaspoon sesame seeds
  • ½ teaspoon red pepper flakes

Direction

1. Place the chicken in a bowl.
2. Add the buttermilk, salt, pepper, and garlic salt. Mix together and cover. Place in the fridge for at least an hour to marinate.
3. Preheat the oven to low heat. Heat a large pan of vegetable oil until it’s hot. You’ll need at least four cups of oil.
4. Mix together the crispy coating ingredients in a small bowl.
5. Take the chicken out of the refrigerator. Lift a piece out of the buttermilk and allow the excess to drip off. Dredge the chicken in the crispy coating. Make sure that the chicken is fully covered. Place on a tray and repeat with the rest of the chicken.
5. Once the oil is hot enough, add in five or six tenders. Cook for three to five minutes.
6. Play on a tray in the oven to keep them warm while the others cook.
7. For the sauce, place the gochujang, sugar, honey, soy sauce, garlic, vegetable oil, and sesame seed oil in a pan. Stir.
8. Bring to a boil, stirring occasionally. Simmer for five minutes.
9. Pour over the chicken and sprinkle the top with spring onion, chili flakes, and sesame seeds.
